WASHINGTON – The U.S. Food and Drug Administration (FDA) has issued draft guidance for the food industry to help growers, manufacturers and food service operators take steps to reduce levels of acrylamide in certain foods.

Efforts to reduce acrylamide levels are already underway in many sectors throughout the food industry. In issuing its draft guidance, the FDA seeks to support industry sectors that have taken a wait-and-see approach, and to help all companies – particularly smaller ones with fewer resources – reduce acrylamide in products susceptible to its formation.

Acrylamide is a chemical that can form in some foods during certain types of high-temperature cooking, such as frying, roasting and baking. Acrylamide in food is a concern because the National Toxicology Program (an interagency program that evaluates possible health risks associated with exposure to certain chemicals) characterizes the substance as “reasonably anticipated to be a human carcinogen.”

To help mitigate potential human health risks, the FDA’s draft guidance recommends that companies be aware of the levels of acrylamide in the foods they produce and consider adopting approaches, if feasible, that reduce acrylamide in their products. The draft guidance also offers a range of possible approaches that growers, manufacturers and food service operators can take to help reduce acrylamide levels.

The draft guidance, which is non-binding, covers raw materials, processing practices, and ingredients affecting potato-based foods (such as french fries and potato chips), cereal-based foods (such as cookies, crackers, breakfast cereals and toasted bread) and coffee, each of which is a significant source of acrylamide exposure.

The draft guidance is part of a number of activities initiated by the FDA to study acrylamide in food and help manage potential risks to human health. For example, the FDA is planning to publish additional data on acrylamide levels in certain foods based on its recent data collection and analysis. Because acrylamide is found primarily in potato-based foods, cereal-based foods, and coffee, for consumers, the FDA’s best advice to help limit one’s acrylamide intake is to adopt a healthy eating plan, consistent with the Dietary Guidelines for Americans, that:

  • Emphasizes fruits, vegetables, whole grains, and fat-free or low-fat milk and milk products;
  • Includes lean meats, poultry, fish, beans, eggs, and nuts; and
  • Is low in saturated fats, trans fats, cholesterol, salt (sodium) and added sugars.

  2. Well the one thing the government admits may cure cancer is illegal, cannabis! LOL

    Either we own our own bodies or we don’t, that’s what freedom is. Since when did we become this nanny state? In America we should be able to make our own choices even if the government thinks it’s bad for us. And the hypocrisy is sickening. The same people who cry about this are the same people wanting to put medical marijuana users behind bars.

    Enough is enough! We either own our own bodies or we don’t. If we don’t then it’s time to go to war.

      1. Telling the same old lie over and over again. If Marinol did what cannabis does, the government wouldn’t grow it for their federal patients.

        Why don’t you call the Feds and tell them to use Marinol? Even THEY would tell you to go f**k yourself.

            Marinol does not contain cannabinoids. Cannabis does and why in 2003 our federal government patented it. This is an excerpt from that patent.

            “Cannabinoids have been found to have antioxidant properties, unrelated to NMDA receptor antagonism. This new found property makes cannabinoids useful in the treatment and prophylaxis of wide variety of oxidation associated diseases, such as ischemic, age-related, inflammatory and autoimmune diseases.The cannabinoids are found to have particular application as neuroprotectants, for example in limiting neurological damage following ischemic insults, such as stroke and trauma, or in the treatment of neurodegenerative diseases, such as Alzheimer’s disease, Parkinson’s disease and HIV dementia.”

  3. We pay these people for this? I have heard it over and over, salt is bad, salt is good, coffee is bad, coffee is good, wine is bad, wine is good, beer is bad beer is good, it is nothing but fear all the time.

    Eat what you like, work hard, do what you want to do and you will live a good life! My parents are in their late 80’s as many others and have never played by the government warnings as far as food goes. There is just to much thinking going on and one study will shut another study out of the water.

    Bottom line, stay healthy and don’t get over weight and you will be fine, whatever you eat.

  4. Do you suppose that it has something to do with the chemicals that farmers use to grow this raw material… Acrylamide was discovered in 2002, I guess we are being used as guinea pigs until they find out exactly what it does to us.
