Carol I. Schaub, 79 of Northwood passed away Monday, January 23, 2023 at MercyOne North Iowa Medical Center, in Mason City.
A service to celebrate her life will be held 3:00 p.m. Thursday, January 26, 2023 at Hope Church, 130 N Broadway Ave, Albert Lea, MN 56007 with Rev. Kaleb Hurley officiating.
Carol was born June 10, 1943 in Albert Lea, MN the daughter of Carl and Inez (Cornelius) Mellang. She grew up in Albert Lea, attending Albert Lea High School. In 1960 she married Charles Guckenburg. The couple had three sons, Michael, who passed away in infancy, Troy and Danny. For many years Carol utilized her outgoing personality in local restaurants and diners as a waitress, including Donut Hut and more recently DanJo’s. On May 18, 1991 she married James “Jim” Schaub in Las Vegas. The couple lived in Phoenix, AZ for a while, returning home to Northwood where they have made their home since 2001. Much of Carol’s time was spent raising Shih Tzus. Carol’s purple highlights were always a conversation starter, but even without them she could light up a room. She never let her small stature limit her: Carol always seemed larger than life. Most of all, she loved her family with all her heart. Her spitfire nature and can-do attitude will be carried by all who loved her.
She is survived by her husband, Jim Schaub of Northwood; sons, Troy A. (Anna) Guckenburg of Laveen, AZ and Danny R. (Janice) Guckenburg of Colorado Springs, CO; Jim’s children, Matthew J. Schaub and Heather (Jerred) Brown; granddaughter, Erin Guckenburg and grandson Joshua Guckenburg, step grandchildren: Kimberly Brown, Katherine “Katie” Brown, Samantha “Sami” Brown and Jessy Matney; two great-grandchildren; as well cousins, nephews and many extended family members.
Preceding her in death are her parents; son, Michael; granddaughter, Jamie; ex husband, Charles Guckenburg; and many extended family members.
